Jasmine Grace (McCoy) Baum
March 29, 1990 ~ March 15, 2026

Jasmine (Jazz) Grace McCoy-Baum, born on March 29, 1990, peacefully entered eternal life on March 15, 2026, surrounded by her loving family. Her passing marks the same day she joyfully married her beloved husband, Seth Baum, 12 years ago in 2014—a day she cherished as one of the happiest of her life.

Jasmine is survived by her devoted husband, Seth; her two children, Diamond and Jaxson Baum; her parents, Betty Scarbrough and Brian McCoy (Kelly Carl-McCoy); and her siblings, Jesseca McCoy (Charlie Webb), Josiah McCoy (Sonya Bird McCoy), and Jonathon McCoy (Michelle McCoy). She also leaves behind numerous nieces and nephews.

Jasmine was preceded in death by her grandparents, Robert and Gail McCoy, and James Ashcraft, as well as her beloved father-in-law, Ted Baum.

Jasmine attended Goddard High School before dedicating herself to the loving role of motherhood. She later earned her GED, demonstrating her commitment to personal growth while nurturing her family. After the passing of her father-in-law in 2017, Jasmine and her family moved to Oklahoma, where they found their perfect place—the cabin—where they built a life rooted in faith, love, and truly made the most of every moment together. She carried a remarkable, determined strength; facing life’s hardest battles with brave courage, unwavering faith, and a spirit that conquered more than words can express.

A devoted daughter, sister, mother, and wife, Jasmine poured her heart into raising her children with unwavering love and guiding them in faith. Her home was a place of warmth, care, and devotion, where love could be felt in every corner. She found joy in planting flowers, earning the loving nickname “the crazy plant lady” from those closest to her. She held a special love for stargazer lilies, as they were one of the first bouquets her husband gave her when they began dating. Jasmine loved watching and caring for hummingbirds; her precious "hummers," spending peaceful moments watching the sunset, reading, and enjoying strategy games. She also found simple happiness in watching fireworks light up the night sky at her family's lake house, treasuring the beauty in those fleeting moments.

Jasmine’s remarkable legacy is one of love, loyalty, and kindness. She will be remembered for her faithfulness to her Lord and Savior and the unconditional love she shared with all who knew her. Though we miss her deeply, her love still surrounds us and carries us forward. Please be reminded that Jasmine would not want sorrow to weigh heavy on your hearts or for anyone to dwell in misery, but rather to find comfort in the blessing of her life and to carry that love forward each day. May her memory bring comfort and grace to all who were blessed to know her.
