Lysbeth Gayle "Libby" (Baker) Adkins

Lysbeth (Libby) Adkins, age 72, of Goldsby passed away peacefully on June 29, 2023. Lysbeth Gayle Baker was born on May 3, 1951 in Kansas City, Missouri, the oldest of four children born to Charles Frank Baker and Gayle (Young) Baker. By 1961, the Baker family settled in Norman where she attended school. By chance she met a young man, while riding the school bus, named Scott Adkins. This was just the beginning of their love story. She graduated from Norman High School, Class of 1969 and attended OU for a couple of years after to further her education. On October 3, 1971, the high school sweethearts became husband and wife. The rest, as they say, is history.

Libby and Scott made their home in Goldsby, where together they raised three sons, Brandon, Brett, and Phillip. On November 7, 1992, they purchased her namesake, Libby’s Café, in Goldsby and they continue to operate it today. Libby was driven and dedicated to working hard every single day whether it was at the café or at the family farm. Not only was she patient, but she was a great listener. More than anything, Libby was a family woman. She loved spending time with her family, especially her grandchildren. They were her pride and joy, and she truly cherished every moment with them. Libby was a loving mother, grandmother, sister, aunt and friend. She will be dearly missed!

She is preceded in death by: her parents, Charles and Gayle Baker, father-in-law Billy P. Adkins, nephew Jeremiah Wolf and sister-in-law Diana Baker.

Libby is survived by: her loving husband, Scott Adkins, her sons, Brandon Adkins of Goldsby, Brett Adkins (Tina) of Goldsby, Phillip Adkins (Monica) of Goldsby; brothers, Chuck Baker of Norman, David Baker (Jimmie) of Norman; sister, Jennifer Wolf (Jerry) of Blanchard; daughter-in-law, Kate Coffin; mother-in-law Yvonne Adkins, sister-in-law Marcia LaMunyon (Larry) of Goldsby; grandchildren, Taylor Adkins, Blake Adkins, Madison Adkins, Chloe Bennett, Cashton Adkins, Raelee Adkins, Auburn Adkins, Colt Coffin, Dawsyn Adkins; one great granddaughter, Averee Adkins; several nieces and nephews, a host of friends and her Libby’s Café family.

A Celebration of Life is scheduled for 11:00 A.M. Wednesday, July 5, 2023 at Libby’s Café Goldsby, OK.
